Sometimes I just want the taste of cookies without dishing out each and every single little cookie onto a pan. That’s what I love about cookie bars. You get the same great taste with less time making them. When I saw these cookies being made I knew I had to try them.

Cookie Bars vs Cookies : What’s the Difference?

  • Cookie bars are traditionally made from a more stiff dough than cookies.
  • Cookie bars are pressed into a pan (like a jelly roll pan) while cookies are scooped individually.
  • After baking, cookie bars are cooled and then cut into squares or bars. Cookies bake on their own and usually resemble a circle.
  • Cookie bars have the same great taste as cookies. However, sometimes you’ll find them to be a bit more chewy due to the dense dough you start with.

There’s a lot of great reasons to make or cookie bars. Hello, dessert goodness! But one of the things that is great about this recipe is that you can combine all ingredients in one bowl and you’re done.

Even thought I love to make a traditional cookie, there’s something simple about the process with cookie bars. I like that they take much less prep time since you can simply add them to the pan and bake. With cookies, I’m usually making three to four pans worth which takes more time.

After mixing all the ingredients you’ll want to press them into a 9×13 pan. Grab some parchment paper and press down to flatten them. This is a great step for kids!

Once baked at 350˚ F for 15 to 20 minutes you’ll have a chewy, fluffy cookie that’s almost ready to eat.

Once cooled, you can cut them into squares or rectangles or diamonds. It’s really up to you. You have complete control of the size of each and every cookie bar.

Cookie Bar Tips:

Do you grease the pan for cookie bars? Because there is enough fat in the butter, you do not need to grease the jelly roll pan before pressing the cookie dough into the pan.

How do you know when cookie bars are done baking? The bars will start to pull away from the sides of the pan, just slightly. You’ll also notice that the middle of the cookie bars look firm and not jiggly. Also, the shine of the cookie dough will no longer be visible.

How many people does a pan of cookie bars serve? As many as you want! That’s the beauty of the cookie bars. You can cut them into small or large pieces. For the average size cookie bar, one jelly roll pan will make 24 average sized cookies.

Chewy chocolate chip M&M cookie bars made in a 9×13 pan! A one bowl dessert recipe.

Ingredients

  • 1/2 Cup butter melted
  • 1 1/2 Cups peanut butter
  • 1 Cup granulated sugar
  • 1 1/4 Cup light brown sugar
  • 3 Eggs large
  • 1 teaspoon light corn syrup
  • 4 Cups old fashioned oats
  • 2 tsp baking soda
  • 1 Cup M&Ms
  • 3/4 Cup chocolate chips

Instructions

  • Preheat oven to 350˚ F.

  • Combine melted butter, peanut butter, sugar, brown sugar, eggs and corn syrup until fully incorporated. Stir in oatmeal, baking soda, M&Ms and chocolate chips.

  • Press into an un-greased jelly roll pan.

  • Bake for 15-20 minutes.

  • Let cool and cut into squares.
